  • ½ cup brown sugar

  • 1 ½ teaspoons ground cinnamon

  • 2 large eggs (room temperature)

  • ½ cup granulated sugar

  • ½ cup melted butter

  • 1 teaspoon vanilla extract (alcohol-free)

  • 1 ½ cups all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • 2 cups chopped apples (Pink Lady, Gala, or Honeycrisp – peeled and chopped, about 2 apples)

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour an 8 x 5-inch loaf pan or line it with parchment paper.

  • In a small bowl, whisk together brown sugar and cinnamon; set aside.

  • In a large mixing bowl, whisk eggs and granulated sugar until well combined.

  • Stir in melted butter and vanilla extract until smooth.

  • Add flour, baking powder, baking soda, and salt. Mix until just combined; batter will be thick.

  • Fold in chopped apples.

  • Pour half the batter into the prepared pan. Sprinkle about three-quarters of the cinnamon sugar mixture over it.

  • Spread remaining batter on top, then sprinkle the rest of the sugar mixture. Swirl gently using a knife or spoon.

  • Bake for 35–45 minutes, or until golden and a toothpick inserted comes out clean.

  • Let cool completely before slicing and serving.

Notes

For extra flavor, mix in chopped walnuts or drizzle a simple vanilla glaze over the cooled loaf. To store, wrap tightly in plastic wrap. It keeps well for up to 3 days or freezes for 3 months.
