½ cup brown sugar

1 ½ teaspoons ground cinnamon

2 large eggs (room temperature)

½ cup granulated sugar

½ cup melted butter

1 teaspoon vanilla extract (alcohol-free)

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

2 cups chopped apples (Pink Lady, Gala, or Honeycrisp – peeled and chopped, about 2 apples)
Instructions

Preheat oven to 350°F (175°C). Grease and flour an 8 x 5-inch loaf pan or line it with parchment paper.

In a small bowl, whisk together brown sugar and cinnamon; set aside.

In a large mixing bowl, whisk eggs and granulated sugar until well combined.

Stir in melted butter and vanilla extract until smooth.

Add flour, baking powder, baking soda, and salt. Mix until just combined; batter will be thick.

Fold in chopped apples.

Pour half the batter into the prepared pan. Sprinkle about three-quarters of the cinnamon sugar mixture over it.

Spread remaining batter on top, then sprinkle the rest of the sugar mixture. Swirl gently using a knife or spoon.

Bake for 35–45 minutes, or until golden and a toothpick inserted comes out clean.

Let cool completely before slicing and serving.
Notes
For extra flavor, mix in chopped walnuts or drizzle a simple vanilla glaze over the cooled loaf. To store, wrap tightly in plastic wrap. It keeps well for up to 3 days or freezes for 3 months.
