Ingredients
2 cups cottage cheese
3 large eggs
1 large apple, peeled and finely diced
1/2 cup rolled oats or almond flour
1/4 cup maple syrup or honey
1 1/2 tsp ground cinnamon
1 tsp Vanilla Extract (Alcohol-Free)
1 tsp baking powder
Instructions

Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish with butter or oil.

In a bowl, whisk together cottage cheese, eggs, maple syrup, and Vanilla Extract (Alcohol-Free) until smooth.

Stir in rolled oats or almond flour, cinnamon, and baking powder until well combined.

Fold in the diced apple pieces gently.

Pour the mixture into the greased baking dish and spread it evenly.

Bake for 35–40 minutes, until golden on top and a toothpick inserted into the center comes out clean.

Let cool slightly before slicing. Serve warm.
