  • 2 ripe avocados, diced

  • 2 ripe mangoes, diced

  • 1 small red onion, thinly sliced

  • 1 red bell pepper, diced

  • 1 jalapeño, finely chopped (optional)

  • 1 cup cherry tomatoes, halved

  • 3 tbsp fresh lime juice

  • 2 tbsp olive oil

  • Salt and pepper to taste

Instructions

  • Wash and prepare all the fresh produce. Dice the avocados and mangoes into bite-sized cubes. Slice the red onion thinly, and chop the red bell pepper, cilantro, and jalapeño (if using). Halve the cherry tomatoes.

  • In a small bowl, whisk together fresh lime juice, olive oil, salt, and black pepper until the dressing is smooth and well combined.

  • Place all prepared salad ingredients into a large mixing bowl.

  • Drizzle the lime dressing evenly over the salad. Toss gently with a spatula or wooden spoon to coat all ingredients without crushing the avocado.

  • Taste and adjust seasoning with extra salt, pepper, or a squeeze of lime, if desired.

  • Serve immediately as a refreshing side dish or over mixed greens. Optionally, chill for 30 minutes before serving for enhanced flavors.
