2 ripe avocados, diced

2 ripe mangoes, diced

Instructions

Wash and prepare all the fresh produce. Dice the avocados and mangoes into bite-sized cubes. Slice the red onion thinly, and chop the red bell pepper, cilantro, and jalapeño (if using). Halve the cherry tomatoes.

In a small bowl, whisk together fresh lime juice, olive oil, salt, and black pepper until the dressing is smooth and well combined.

Place all prepared salad ingredients into a large mixing bowl.

Drizzle the lime dressing evenly over the salad. Toss gently with a spatula or wooden spoon to coat all ingredients without crushing the avocado.

Taste and adjust seasoning with extra salt, pepper, or a squeeze of lime, if desired.

Serve immediately as a refreshing side dish or over mixed greens. Optionally, chill for 30 minutes before serving for enhanced flavors.
