Ingredients

1 pound ground beef sausage

4 ½ cups milk

½ cup flour

3 tablespoons butter

¾ teaspoon salt

½ teaspoon black pepper

¼ teaspoon cayenne pepper

2 (7.5-ounce) cans refrigerator biscuits, or homemade drop biscuit dough
Instructions

Preheat oven to 350°F (175°C). Spray a 13 x 9-inch glass baking dish with cooking spray.

In a medium pot, cook the sausage over medium heat until browned. Transfer sausage to the baking dish. Blot excess grease with a paper towel.

Add butter to the pot with sausage drippings and melt over medium heat. Stir in flour, salt, black pepper, and cayenne pepper. Cook 2–3 minutes until lightly browned to form a roux.

Slowly whisk in the milk, a little at a time, until smooth. Continue cooking on medium-low heat, stirring often, until thickened. Pour the gravy evenly over the sausage in the dish.

Cut each biscuit into fourths, or divide homemade dough into small portions. Arrange biscuit pieces evenly over the gravy.

Bake for 25–30 minutes, until biscuits are golden brown and cooked through. Serve warm.

Homemade biscuit dough adds a rustic touch and works just as well as canned biscuits.

Adjust the spice level by adding more cayenne pepper or paprika.
