Ingredients

2 medium zucchinis (sliced lengthwise into 1/4-inch thick strips)

2 tablespoons olive oil

Salt and black pepper (to taste)

2 large ripe tomatoes (sliced)

8 ounces fresh mozzarella cheese (sliced)

Fresh basil leaves

Balsamic glaze (for drizzling)
Instructions

Preheat grill to medium-high heat.

Brush zucchini slices with olive oil on both sides. Sprinkle with salt and pepper.

Place zucchini on the grill. Cook for 3–4 minutes per side until tender and grill marks appear. Remove from grill.

On a serving platter, layer grilled zucchini, tomato slices, and mozzarella slices, overlapping slightly.

Add fresh basil leaves over the top and between layers.

Drizzle with balsamic glaze.

Serve immediately.

Use a grill pan or broiler if you don’t have an outdoor grill.

Substitute balsamic glaze with a mix of apple vinegar and honey if needed.
