  • 2 medium zucchinis (sliced lengthwise into 1/4-inch thick strips)

  • 2 tablespoons olive oil

  • Salt and black pepper (to taste)

  • 2 large ripe tomatoes (sliced)

  • 8 ounces fresh mozzarella cheese (sliced)

  • Fresh basil leaves

  • Balsamic glaze (for drizzling)

Instructions

  • Preheat grill to medium-high heat.

  • Brush zucchini slices with olive oil on both sides. Sprinkle with salt and pepper.

  • Place zucchini on the grill. Cook for 3–4 minutes per side until tender and grill marks appear. Remove from grill.

  • On a serving platter, layer grilled zucchini, tomato slices, and mozzarella slices, overlapping slightly.

  • Add fresh basil leaves over the top and between layers.

  • Drizzle with balsamic glaze.

  • Serve immediately.
