Instructions
- 1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- 2. In a large bowl, mix together the cottage cheese, eggs, sugar, and vanilla until smooth.
- 3. In another bowl, whisk the flour and baking powder together.
- 4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- 5. Fold in the chocolate chips carefully.
- 6. Fill muffin cups about two-thirds full with the batter and bake for 20-25 minutes until golden brown.
