Ingredients

  • 2 1/4 teaspoons active dry yeast

  • 1 cup warm water

  • 1 tablespoon granulated sugar

  • 3 1/2 cups all-purpose flour

  • 1 teaspoon salt

  • 2 tablespoons unsalted butter, melted

  • 1/4 cup baking soda

  • 1 large egg, beaten

  • 1/2 cup granulated sugar

  • 2 teaspoons ground cinnamon

Instructions

  • Pour 1 cup of warm water into a bowl.

  • Sprinkle yeast over the water.

  • Stir in 1 tablespoon sugar until dissolved.

  • Let rest 5–10 minutes until foamy.

  • In a large bowl, combine flour and salt.

  • Add the yeast mixture and melted butter.

  • Stir until dough forms.

  • Knead on a floured surface for 5–7 minutes.

  • Place dough in an oiled bowl, cover, and let rise 1–1 1/2 hours until doubled.

  • Punch down the dough.

  • Divide into 8 portions.

  • Roll each into an 18-inch rope.

  • Shape into pretzels.

  • Preheat oven to 375°F (190°C).

  • Boil 10 cups of water in a pot.

  • Stir in 1/4 cup baking soda.

  • Drop pretzels in water, one at a time, for 30 seconds.

  • Remove with a slotted spoon and place on parchment-lined baking sheet.

  • Brush pretzels with beaten egg.

  • Mix 1/2 cup sugar with 2 teaspoons cinnamon.

  • Sprinkle mixture over pretzels.

  • Bake 12–15 minutes until golden brown.

  • Cool slightly on a wire rack before serving.

Notes

For extra sweetness, dip pretzels in cream cheese frosting or drizzle with vanilla glaze. To make smaller portions, divide dough into more pieces.
