2 1/4 teaspoons active dry yeast

1 cup warm water

1 tablespoon granulated sugar

3 1/2 cups all-purpose flour

1 teaspoon salt

2 tablespoons unsalted butter, melted

1/4 cup baking soda

1 large egg, beaten

1/2 cup granulated sugar

2 teaspoons ground cinnamon
Instructions

Pour 1 cup of warm water into a bowl.

Sprinkle yeast over the water.

Stir in 1 tablespoon sugar until dissolved.

Let rest 5–10 minutes until foamy.

In a large bowl, combine flour and salt.

Add the yeast mixture and melted butter.

Stir until dough forms.

Knead on a floured surface for 5–7 minutes.

Place dough in an oiled bowl, cover, and let rise 1–1 1/2 hours until doubled.

Punch down the dough.

Divide into 8 portions.

Roll each into an 18-inch rope.

Shape into pretzels.

Preheat oven to 375°F (190°C).

Boil 10 cups of water in a pot.

Stir in 1/4 cup baking soda.

Drop pretzels in water, one at a time, for 30 seconds.

Remove with a slotted spoon and place on parchment-lined baking sheet.

Brush pretzels with beaten egg.

Mix 1/2 cup sugar with 2 teaspoons cinnamon.

Sprinkle mixture over pretzels.

Bake 12–15 minutes until golden brown.

Cool slightly on a wire rack before serving.
Notes
For extra sweetness, dip pretzels in cream cheese frosting or drizzle with vanilla glaze. To make smaller portions, divide dough into more pieces.
