- 4 boneless, skinless chicken breasts (1.5 lbs)
- 3 cloves fresh garlic, minced
- 1 medium onion, chopped
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup long-grain white rice
- 2 tbsp Dijon mustard
- 1 tsp paprika
- Salt and pepper to taste
- Cooking oil (for sautéing)
Instructions
- Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
- Season chicken breasts with salt and pepper, then place them in the prepared dish.
- In a skillet over medium heat, add oil and sauté onion and garlic until translucent.
- Stir in chicken broth, heavy cream, Dijon mustard, paprika, and desired seasonings to create the sauce.
- Pour the sauce over the chicken and scatter rice around it.
- Cover with foil and bake for 30-35 minutes until the chicken is cooked through and rice is tender. Remove foil for the last 10 minutes to achieve a golden top.
