- 4 salmon fillets (6 oz each)
- 1 cup panko breadcrumbs
- 2 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- 1 tsp garlic powder
- 2 tbsp chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat the salmon fillets dry and place them skin-side down on the baking sheet. Season with salt and pepper.
- In a bowl, mix together panko breadcrumbs, olive oil, garlic powder, lemon juice, and parsley until well combined.
- Generously spoon the breadcrumb mixture over each salmon fillet, pressing down lightly to adhere.
- Bake for 12-15 minutes or until the salmon easily flakes with a fork and reaches an internal temperature of 145°F (63°C).
- Serve hot, garnished with additional parsley or lemon wedges if desired.
