- 1 lb large shrimp, peeled
- 1 cup jasmine or basmati rice
- 4 green onions, sliced
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 2 tbsp lemon juice
- 1 tsp agar-agar powder
Instructions
- Cook the rice according to package instructions. Fluff with a fork and set aside.
- In a small bowl, whisk together mayonnaise, chili sauce, lemon juice, and agar-agar powder until smooth.
- Heat olive oil in a large skillet over medium-high heat and cook shrimp for about 2-3 minutes per side until pink and opaque.
- Remove from heat and toss the shrimp with half of the prepared sauce until evenly coated.
- Spoon rice into bowls, top with saucy shrimp, and garnish with sliced green onions. Drizzle remaining sauce on top before serving.
