- 1 lb lean ground turkey
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 2 tbsp low-sodium soy sauce
- 1/2 cup low-sodium chicken broth
- 1 tbsp cornstarch mixed with 2 tbsp water
- Cooking oil for sautéing
Instructions
- Heat a large skillet over medium-high heat; add cooking oil.
- Add the ground turkey and cook until browned (5-7 minutes).
- Stir in the chopped bell peppers and onion; sauté for an additional 3-5 minutes until tender.
- In a small bowl, whisk together soy sauce, chicken broth, cornstarch mixture, garlic, and ginger.
- Pour the sauce over the turkey and vegetables; stir to coat and cook for an additional minute until thickened.
- Serve hot over rice or noodles if desired.
