- 4 large hard-boiled eggs, chopped
- 1 cup cottage cheese (low-fat or full-fat)
- 2 tablespoons fresh dill or chives, finely chopped
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- Boil the eggs in a pot of water for 9-12 minutes. Transfer them to an ice bath to cool.
- Peel and chop the cooled eggs into bite-sized pieces.
- In a medium bowl, combine the chopped eggs, cottage cheese, mustard, herbs, salt, and pepper until well mixed.
- Taste and adjust seasoning as needed.
- Cover and chill in the refrigerator for 30 minutes before serving.
- Serve chilled over lettuce or as a sandwich filling.
