- 4 fresh cod fillets (6 oz each)
- 1 cup full-fat coconut milk
- 3 tbsp fresh lemon juice
- 3 garlic cloves, minced
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp chopped fresh cilantro or parsley (for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish with cooking spray or olive oil.
- In a medium saucepan over medium heat, combine coconut milk, minced garlic, lemon juice, salt, and pepper, stirring until warmed through but not boiling.
- Place the cod fillets in the prepared baking dish and pour the warm sauce evenly over each fillet.
- Bake for 20-25 minutes or until the cod flakes easily with a fork.
- Let rest for a few minutes before serving. Garnish with fresh herbs and drizzle with sauce.
