Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
- In a large bowl, whisk together ricotta cheese, sugar, eggs, and vanilla extract until smooth.
- In another bowl, mix almond flour and baking powder.
- Gradually fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
- Spoon the batter into muffin cups, filling each about two-thirds full.
- Bake for 20-25 minutes until golden brown and a toothpick inserted comes out clean. Let cool before serving.
