Instructions
- Preheat your oven to 425°F (220°C).
- Wash the asparagus and carrots thoroughly; trim ends of asparagus and slice carrots evenly.
- In a large bowl, combine asparagus, carrots, olive oil, garlic powder, salt, and pepper. Toss until the vegetables are evenly coated.
- Spread the seasoned vegetables in a single layer on a parchment-lined baking sheet.
- Roast in the preheated oven for 20-25 minutes or until tender and slightly caramelized, tossing halfway through.
- Serve warm as a vibrant side dish.
