This easy pineapple coleslaw combines crunchy cabbage, sweet pineapple, and a creamy dressing. It’s quick to prepare, refreshing, and perfect for barbecues, picnics, or weeknight dinners.

Ingredients

  • 1 (14 oz) bag coleslaw mix

  • 1 (8 oz) can pineapple tidbits, drained (reserve juice)

  • ½ tsp salt

  • ¼ tsp black pepper

  • 2 tbsp granulated sugar

  • 2 tbsp reserved pineapple juice

  • 1 tbsp apple cider vinegar

  • ½ cup mayonnaise

Instructions

  • Place the coleslaw mix into a large mixing bowl.

  • Add the drained pineapple tidbits, then sprinkle in the salt and black pepper. Toss gently to combine.

  • In a separate small bowl, whisk together the sugar, reserved pineapple juice, apple cider vinegar, and mayonnaise. Mix until the dressing is smooth and creamy.

  • Pour the dressing over the coleslaw mix. Stir well until all the ingredients are evenly coated.

  • Cover the bowl with plastic wrap and refrigerate for at least 4 hours. For best results, let it chill overnight.

  • Before serving, give the coleslaw a good stir to redistribute the dressing. Serve chilled and enjoy.

Notes

  • Fresh pineapple can be used instead of canned for a brighter flavor.

  • For a lighter version, replace part of the mayonnaise with plain Greek yogurt.

  • Adjust sweetness by adding more or less sugar according to your taste.
