Ingredients

1 (14 oz) bag coleslaw mix

1 (8 oz) can pineapple tidbits, drained (reserve juice)

½ tsp salt

¼ tsp black pepper

2 tbsp granulated sugar

2 tbsp reserved pineapple juice

1 tbsp apple cider vinegar

½ cup mayonnaise
Instructions

Place the coleslaw mix into a large mixing bowl.

Add the drained pineapple tidbits, then sprinkle in the salt and black pepper. Toss gently to combine.

In a separate small bowl, whisk together the sugar, reserved pineapple juice, apple cider vinegar, and mayonnaise. Mix until the dressing is smooth and creamy.

Pour the dressing over the coleslaw mix. Stir well until all the ingredients are evenly coated.

Cover the bowl with plastic wrap and refrigerate for at least 4 hours. For best results, let it chill overnight.

Before serving, give the coleslaw a good stir to redistribute the dressing. Serve chilled and enjoy.

Fresh pineapple can be used instead of canned for a brighter flavor.

For a lighter version, replace part of the mayonnaise with plain Greek yogurt.

Adjust sweetness by adding more or less sugar according to your taste.
