1 cucumber, peeled, fork-scored, thinly sliced, then diced

1½ cups cherry tomatoes, cut into quarters

8 oz fresh mozzarella

½ large red onion, chopped into small pieces
Instructions
Peel the cucumber fully, then use a fork to score it lengthwise. Slice it thinly, then dice it into small pieces.
Rinse the cherry tomatoes and cut them into quarters.
Cut the fresh mozzarella into small bite-sized pieces.
Finely chop half of a large red onion into small pieces.
In a small bowl, combine olive oil and apple vinegar.
Add the dried oregano, dried basil, salt, and pepper to the dressing mixture. Whisk until smooth.
In a large bowl, combine the cucumber, cherry tomatoes, mozzarella, and red onion.
Pour the prepared dressing over the salad ingredients.
Gently toss everything together until well combined and evenly coated.
Notes
You can customize this salad by adding grilled beef or chicken ham for extra protein. Adjust the herbs to your taste, and feel free to add avocado or chickpeas for more richness.
