Ingredients
-
¼ cup olive oil
-
2 tablespoons lemon juice
-
1 tablespoon honey (optional, for balance)
-
4 garlic cloves, minced
-
1 teaspoon Italian seasoning
-
½ teaspoon smoked paprika
-
½ teaspoon salt
-
¼ teaspoon black pepper
-
¼ cup grated Parmesan cheese
-
1½ to 2 pounds boneless, skinless chicken breasts or thighs
-
More Parmesan for topping
-
Chopped fresh parsley, for garnish
Instructions
-
In a mixing bowl, whisk together olive oil, lemon juice, honey, garlic, Italian seasoning, smoked paprika, salt, black pepper, and Parmesan cheese.
-
Add the chicken to the bowl and toss until fully coated. Cover and marinate in the refrigerator for at least 30 minutes or up to four hours.
-
Preheat the grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
-
Remove the chicken from the marinade, allowing excess to drip off.
-
Grill the chicken for five to seven minutes on each side, or until the internal temperature reaches 165°F (75°C).
-
During the last one to two minutes of grilling, sprinkle extra Parmesan over the chicken to melt.
-
Remove the chicken from the grill and let it rest for five minutes.
-
Garnish with fresh parsley and additional Parmesan before serving.
Notes
-
Chicken thighs provide a juicier result, but breasts work well too.
-
Adjust honey for more or less sweetness.
-
Serve with salad, grilled vegetables, or rice for a full meal.
