  • ¼ cup olive oil

  • 2 tablespoons lemon juice

  • 1 tablespoon honey (optional, for balance)

  • 4 garlic cloves, minced

  • 1 teaspoon Italian seasoning

  • ½ teaspoon smoked paprika

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ¼ cup grated Parmesan cheese

  • to 2 pounds boneless, skinless chicken breasts or thighs

  • More Parmesan for topping

  • Chopped fresh parsley, for garnish

Instructions

  • In a mixing bowl, whisk together olive oil, lemon juice, honey, garlic, Italian seasoning, smoked paprika, salt, black pepper, and Parmesan cheese.

  • Add the chicken to the bowl and toss until fully coated. Cover and marinate in the refrigerator for at least 30 minutes or up to four hours.

  • Preheat the grill to medium-high heat. Lightly oil the grill grates to prevent sticking.

  • Remove the chicken from the marinade, allowing excess to drip off.

  • Grill the chicken for five to seven minutes on each side, or until the internal temperature reaches 165°F (75°C).

  • During the last one to two minutes of grilling, sprinkle extra Parmesan over the chicken to melt.

  • Remove the chicken from the grill and let it rest for five minutes.

  • Garnish with fresh parsley and additional Parmesan before serving.

Notes

  • Chicken thighs provide a juicier result, but breasts work well too.

  • Adjust honey for more or less sweetness.

  • Serve with salad, grilled vegetables, or rice for a full meal.
