  • 4 boneless, skinless chicken breasts

  • 1 cup BBQ sauce

  • 1 can (or fresh) pineapple chunks

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 medium red onion, sliced

  • Salt and pepper to taste

  • Fresh cilantro, for garnish (optional)

  • Aluminum foil

Instructions

Preheat the grill to medium-high heat.
Cut 4 large pieces of aluminum foil and lay them flat on a clean surface.
Place one chicken breast in the center of each foil piece.
Pour 1/4 cup of BBQ sauce over each chicken breast and spread it evenly.
Top each chicken breast with an equal amount of pineapple chunks, sliced bell peppers, and sliced red onion.
Season with salt and pepper to taste.
Fold the sides of the foil over the chicken and vegetables, crimping the edges tightly to seal the packets completely.
Place the foil packets on the grill and cook for 25 to 30 minutes, or until the chicken is fully cooked and no longer pink in the center.
Carefully open the packets, being cautious of the hot steam.
Garnish with fresh cilantro if desired. Serve warm.

Notes

For added flavor, you can try using a spicy BBQ sauce or add a pinch of chili flakes before sealing the packets.
