For the Chicken:

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces (or thighs if preferred)

  • 2 tbsp olive oil

  • Salt and black pepper, to taste

  • 0.5 tsp garlic powder

  • 5 cloves garlic, minced

  • 0.25 cup honey

  • 2 tbsp soy sauce

  • 1 tbsp apple cider vinegar

  • 1 tbsp butter

For the Creamy Rice:

  • 1.5 cups jasmine or white rice

  • 3 cups chicken broth

  • 1 cup heavy cream

  • 1 cup shredded mozzarella cheese

  • 0.5 cup cream cheese, softened

  • 0.5 cup grated Parmesan cheese

  • 1 tbsp butter

  • Salt and pepper, to taste

  • 1 tsp Italian seasoning

For Garnish:

  • Fresh parsley, chopped

Instructions

  • In a large pot, combine rice and chicken broth. Bring to a boil, reduce heat to low, cover tightly, and simmer for 15 minutes until liquid is absorbed.

  • Once rice is tender, turn off heat. Stir in butter, heavy cream, cream cheese, mozzarella, and Parmesan. Mix until smooth and creamy. Season with salt, pepper, and Italian seasoning. Cover and keep warm.

  • Heat olive oil in a large skillet over medium-high heat. Season chicken pieces with salt, pepper, and garlic powder. Cook for 12–15 minutes until golden brown and fully cooked.

  • Push chicken to the sides of the skillet. Add butter and minced garlic to the center. Cook garlic for 30 seconds until fragrant.

  • Pour in honey, soy sauce, and apple cider vinegar. Stir to coat chicken evenly. Simmer for 2–3 minutes until sauce thickens and becomes sticky.

  • Serve chicken bites over creamy rice. Garnish with fresh parsley.

Notes

  • Chicken thighs can be used instead of chicken breasts.

  • Add red pepper flakes for a spicy kick.

  • Use half-and-half instead of heavy cream for a lighter version.
