Ingredients
For the Salad:

2 Honeycrisp apples, thinly sliced

1 cup mixed greens (arugula, spinach, or baby kale)

1/2 small red onion, thinly sliced

1/2 cucumber, sliced

1/4 cup crumbled feta cheese

1/4 cup toasted pecans or walnuts

1/4 cup dried cranberries or raisins (optional)
For the Dressing:

2 tablespoons olive oil

1 tablespoon balsamic vinegar (or apple cider vinegar)

1 teaspoon honey

Salt and pepper, to taste
Instructions

Wash and slice apples, cucumber, and red onion.

Toast pecans or walnuts in a dry skillet over medium heat until fragrant, about 5 minutes.

In a large bowl, combine mixed greens, sliced apples, cucumber, red onion, and feta. Add dried cranberries or raisins if desired.

In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
