  • Total Time: 20 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

For the Salad:

  • 2 Honeycrisp apples, thinly sliced

  • 1 cup mixed greens (arugula, spinach, or baby kale)

  • 1/2 small red onion, thinly sliced

  • 1/2 cucumber, sliced

  • 1/4 cup crumbled feta cheese

  • 1/4 cup toasted pecans or walnuts

  • 1/4 cup dried cranberries or raisins (optional)

For the Dressing:

  • 2 tablespoons olive oil

  • 1 tablespoon balsamic vinegar (or apple cider vinegar)

  • 1 teaspoon honey

  • Salt and pepper, to taste

Instructions

  • Wash and slice apples, cucumber, and red onion.

  • Toast pecans or walnuts in a dry skillet over medium heat until fragrant, about 5 minutes.

  • In a large bowl, combine mixed greens, sliced apples, cucumber, red onion, and feta. Add dried cranberries or raisins if desired.

  • In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.

  • Drizzle dressing over the salad and toss gently to coat.

  • Top with toasted nuts and serve immediately.

Notes

  • Swap feta for goat cheese or mozzarella if preferred.

  • Add grilled chicken, turkey bacon, or chickpeas for extra protein.

  • Use lemon juice on sliced apples to prevent browning if preparing in advance.
