Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, espresso powder, granulated sugar, and brown sugar.
- In a large bowl, cream softened butter with both sugars until light and fluffy (about 3 minutes).
- Beat in eggs one at a time followed by vanilla extract until fully combined.
- Gradually mix dry ingredients into the wet mixture until just combined; do not overmix.
- Fold in chocolate chips gently with a spatula.
- Scoop dough onto prepared baking sheets and bake for 10-12 minutes until edges are golden.
