- 1 ½ cups crushed graham crackers
- 6 tbsp unsalted butter, melted
- 1 cup fresh blueberries
- 8 oz high-quality dark chocolate, chopped
- 1 cup coconut cream
- Fresh mint leaves (for garnish)
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix crushed graham crackers with melted butter and press into a tart pan to form the crust.
- Bake the crust for about 10 minutes until golden brown. Allow it to cool completely.
- Melt chopped dark chocolate and coconut cream together in a heatproof bowl over simmering water or in short bursts in the microwave until smooth.
- Gently fold fresh blueberries into the ganache mixture.
- Pour the blueberry ganache into the cooled crust and smooth the top with a spatula.
- Refrigerate for at least 2 hours or until set. Garnish with fresh mint leaves before serving.
