- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 can (14 oz) artichoke hearts, drained
- 4 cups fresh spinach, washed
- 8 oz cream cheese, softened
- 1 cup low-sodium chicken broth
- 1 cup plain or seasoned breadcrumbs
- ½ cup grated Parmesan cheese
Instructions
- Preheat oven to 350°F (175°C) and grease a baking dish.
- Season chicken breasts with salt and pepper; place in the baking dish.
- In a skillet over medium heat, sauté spinach until wilted (3-4 minutes); set aside.
- In a bowl, mix cream cheese, artichokes, sautéed spinach, and chicken broth until well combined.
- Spread the mixture evenly over chicken in the baking dish.
- Top with breadcrumbs and Parmesan cheese.
- Bake for 30-35 minutes until chicken reaches an internal temperature of 165°F (74°C) and toppings are golden brown.
