- 3 boneless, skinless chicken breasts (approx. 1 lb)
- 1 cup sliced bell peppers (red and yellow)
- 1 cup sliced cucumber
- 2 green onions, chopped
- ½ cup mayonnaise
- ¼ cup sweet chili sauce
- 1 tbsp sriracha
Instructions
- Cut chicken breasts into bite-sized pieces and season with salt and pepper.
- Heat oil in a skillet over medium heat and cook chicken until golden brown and cooked through (6-8 minutes).
- While chicken is cooking, mix mayonnaise, sweet chili sauce, and sriracha in a bowl until smooth.
- Slice bell peppers and cucumber into thin strips.
- In serving bowls, layer cooked chicken on top of sliced vegetables and drizzle generously with sauce.
- Garnish with chopped green onions and serve immediately.
