- 1 cup crushed Biscoff cookies
- 1/2 cup unsalted butter (melted)
- 3/4 cup brown sugar (packed)
- 1/4 cup granulated sugar
- 2 large eggs (room temperature)
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, mix melted butter, brown sugar, and granulated sugar until smooth. Add eggs one at a time, followed by vanilla extract.
- In another bowl, whisk together flour and baking powder until combined.
- Gradually fold the dry mixture into the wet ingredients and gently fold in crushed Biscoff cookies.
- Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes or until golden brown and a toothpick inserted comes out clean.
- Allow blondies to cool completely before cutting into squares. Enjoy!
