Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, cream together the brown sugar, granulated sugar, and egg until fluffy. Mix in the grated carrots until well combined.
- Gradually add the dry ingredients to the wet mixture and stir until just combined; avoid overmixing.
- If desired, fold in the chopped nuts gently into the dough.
- Drop spoonfuls of dough onto prepared baking sheets and bake for 12-15 minutes or until edges are lightly golden. Allow cooling before serving.
