- 3 boneless, skinless chicken breasts (approximately 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 4 whole wheat tortillas
- 1 cup mixed fresh vegetables (bell peppers, spinach, cucumbers)
Instructions
- Preheat oven to 400°F (200°C). Season chicken breasts with salt and pepper.
- In a bowl, mix minced garlic with 2 tablespoons olive oil. Drizzle over the chicken.
- Bake chicken in a dish for 25-30 minutes or until cooked through. Let rest, then shred.
- Lay tortillas flat, layer shredded chicken, cheeses, and veggies on top.
- Roll tortillas tightly and secure with toothpicks if needed. Slice in half and serve warm.
