- 2 boneless, skinless chicken breasts (about 1 lb)
- 2 tablespoons olive oil
- 2 cloves fresh garlic, minced
- 1 cup low-sodium chicken broth
- 1/4 cup fresh lemon juice (about 2 lemons)
- 2 tablespoons capers
- Salt and pepper to taste
Instructions
- Flatten the chicken breasts to even thickness and season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Cook chicken for 4-5 minutes on each side until golden brown and fully cooked. Remove from skillet and set aside.
- In the same skillet, reduce heat and add minced garlic; sauté until fragrant (about 1 minute).
- Add chicken broth and lemon juice, scraping up any browned bits from the pan. Simmer for about 2 minutes.
- Stir in capers, return cooked chicken to the skillet, and simmer together for an additional 2 minutes.
- Serve the chicken drizzled with sauce.
