Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs, room temperature
- ½ cup unsweetened cocoa powder
- 1 cup fresh strawberries, pureed
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter; press into the bottom of a springform pan.
- Beat cream cheese until smooth; gradually add sugar and mix well. Incorporate eggs one at a time.
- Sift cocoa powder into the mixture, folding gently to combine.
- Puree fresh strawberries until smooth; strain if desired.
- Layer half of the chocolate filling in the crust, drizzle with half of the strawberry puree. Repeat and swirl with a knife.
- Bake for 50-60 minutes until set but slightly wobbly in the center. Cool in the oven for one hour before serving chilled.
