- 1 cup full-fat coconut milk
- 1/4 cup freshly squeezed lime juice
- 1 tablespoon grated fresh ginger
- 4 minced garlic cloves
- 2 tablespoons honey

Instructions
- 1. Marinate the Chicken: In a large bowl, whisk together coconut milk, lime juice, ginger, garlic, and honey. Add the chicken breasts and coat thoroughly. Cover and refrigerate for at least one hour (or overnight for more flavor).
- 2. Preheat Oven: Preheat your oven to 400°F (200°C) or preheat the grill if you are grilling.
- 3. Prepare Baking Dish: Lightly grease a baking dish with nonstick spray or olive oil.
- 4. Transfer Chicken: Remove chicken from marinade and place in the prepared baking dish or on the grill. Discard remaining marinade.
- 5. Cook Until Juicy: Bake for 25-30 minutes or grill each side for 6-8 minutes until cooked through (internal temperature should reach 165°F).
- 6. Serve and Enjoy: Transfer to plates, drizzle with reserved sauce if desired, and garnish with cilantro or lime wedges.
