- 1 cup dried cranberries
- 1 cup toasted pecans
- 4 cups mixed greens (spinach and arugula)
- ½ cup poppy seed dressing
Instructions
- Season chicken breasts with salt and pepper. Grill or bake at 375°F (190°C) for 20-25 minutes until fully cooked.
- Allow the chicken to cool slightly before chopping into bite-sized pieces.
- In a dry skillet over medium heat, toast pecans for about 5 minutes until fragrant.
- In a large bowl, combine mixed greens, chopped chicken, cranberries, and pecans. Toss gently to mix.
- Drizzle poppy seed dressing over the mixture and toss until well coated.
- Transfer to plates or bowls; garnish with extra cranberries or pecans if desired.
