- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 tbsp fresh ginger, grated
- 3 garlic cloves, minced
- 1 cup freshly squeezed orange juice
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce
- 2 tbsp cornstarch mixed with 2 tbsp water
Instructions
- Trim excess fat from the chicken breasts and cut them into bite-sized pieces.
- In a bowl, whisk together orange juice, soy sauce, honey, minced garlic, and grated ginger until well combined.
- Place chicken in the crockpot and pour the orange sauce mixture over it, ensuring all pieces are coated.
- Cook on low for about 4 hours until the chicken is tender.
- Mix cornstarch with water and stir into the crockpot; cook on high for an additional 30 minutes to thicken the sauce.
- Serve hot over rice or vegetables.
