Instructions
- Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix eggs, vegetable oil, lemon juice, and zest until smooth.
- Combine wet and dry ingredients gently until just mixed; avoid overmixing.
- Fold in blueberries carefully.
- Pour batter into the prepared pan and bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in the pan for a few minutes before transferring to a wire rack.
