- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar (divided)
- 1/4 cup fresh lemon juice
- Zest of 1 lemon
- 1 cup fresh raspberries
- 1 tsp baking powder
Instructions
- Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a bowl, mix flour, melted butter, and 1/2 cup sugar until crumbly. Press into the bottom of the dish to form the crust. Bake for 15 minutes until golden.
- In another bowl, whisk together remaining sugar, lemon juice, zest, and baking powder. Gently fold in raspberries.
- Pour filling over baked crust and return to oven. Bake for an additional 25-30 minutes until set.
- Let cool completely before slicing into squares.
