Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt; set aside.
- In a large bowl, cream the softened butter and sugar until light and fluffy (about 3 minutes).
- Add the egg, lemon zest, and lemon juice to the butter-sugar mixture; mix until combined.
- Gradually incorporate the dry ingredients into the wet mixture until just combined—do not overmix.
- Scoop tablespoon-sized portions onto prepared sheets and bake for 10-12 minutes or until edges are lightly golden.
- Allow cookies to cool on sheets for a few minutes before transferring them to plates.
