- 1 cup fresh raspberries (plus extra for garnish)
- 6 oz high-quality dark chocolate
- 1 cup heavy cream
- 2 tbsp sugar
- 1 tsp agar-agar powder
Instructions
- Gently wash fresh raspberries and set aside some for garnish. If using frozen raspberries, thaw and drain excess liquid.
- Melt dark chocolate in a heatproof bowl over simmering water or in the microwave until smooth. Let cool slightly.
- In a large bowl, whip heavy cream to soft peaks; gradually add sugar until stiff peaks form.
- Carefully fold the melted chocolate into the whipped cream until fully combined.
- Dissolve agar-agar powder in water according to package instructions, bring to a boil while stirring, then remove from heat.
- Combine agar-agar mixture with the mousse, then spoon into serving cups. Refrigerate for at least 2 hours to set. Garnish with fresh raspberries before serving.
