- 2 cups all-purpose flour

- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp salt
- ¾ cup vegetable oil (or melted coconut oil)
- 4 large eggs
- 2 cups shredded carrots
- ½ cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a bundt pan.
- In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, beat oil and sugar until smooth. Add eggs one at a time.
- Fold in shredded carrots and nuts if desired.
- Gradually combine dry ingredients with wet mixture without overmixing.
- Pour batter into the prepared pan and bake for 45-50 minutes until a toothpick comes out clean. Let cool before serving.
