- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- 1 cup vegetable oil (or melted coconut oil)
- 4 large eggs (room temperature)
- 2 cups finely grated carrots
- 1 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a bundt pan thoroughly.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and a pinch of salt.
- In another bowl, whisk the oil and eggs until smooth. Stir in grated carrots and nuts if using.
- Combine wet ingredients with dry ingredients gently; do not overmix.
- Pour the batter into the prepared bundt pan and bake for 45-50 minutes or until a toothpick comes out clean.
- Cool in the pan for ten minutes before inverting onto a wire rack to cool completely.
