- Zest and juice of 2 fresh oranges

- 1/4 cup vegetable oil
Instructions
- Preheat your oven to 350°F (175°C) and grease a round cake pan.
- In a bowl, whisk together flour, baking powder, salt, and chopped pistachios.
- In another bowl, mix ricotta cheese, sugar, vegetable oil, eggs, orange zest, and juice until smooth.
- Gradually add the dry mixture into the wet mixture until just combined; avoid overmixing.
- Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
