- 1 ½ cups all-purpose flour
- 2 tbsp unsweetened cocoa powder
- 1 cup granulated sugar
- 1 tsp baking powder
- ½ tsp salt
- ½ cup vegetable oil
- 2 large eggs
- 1 tbsp red food coloring (gel)
- 8 oz cream cheese (softened)
- ½ cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line muffin tins with cupcake liners.
- In a bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt.
- In another bowl, mix vegetable oil, eggs, red food coloring, and vanilla extract until combined.
- Gradually add the wet ingredients to dry ingredients and stir until just combined.
- Beat softened cream cheese with powdered sugar until smooth.
- Fill each cupcake liner halfway with batter, add a spoonful of cream cheese filling on top, then cover with more batter until three-quarters full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cupcakes cool completely before frosting.
