- 3 lbs beef chuck roast
- 4 cups low-sodium beef broth
- 2 medium onions, sliced
- 4 garlic cloves, minced
- 6 French rolls
- 6 slices provolone cheese
Instructions
- Season the beef chuck roast with salt and pepper. In a skillet over medium-high heat, sear the roast on all sides until browned.
- Layer sliced onions in the bottom of your slow cooker. Place the seared roast on top and add minced garlic.
- Pour in enough beef broth to cover three-quarters of the roast.
- Cover and cook on low for about 8 hours until the beef is tender and easily shredded.
- Remove the roast, shred it with two forks, and lightly toast the French rolls.
- Assemble sandwiches by filling each roll with shredded beef, topping with provolone cheese, and serving with warm broth for dipping.
