- 1.5 lbs beef chuck roast, cut into bite-sized pieces
- 1.5 lbs baby potatoes, halved
- 6 cloves fresh garlic, minced
- 4 tbsp unsalted butter
- 1 cup beef broth
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Prepare the ingredients: Wash and halve the baby potatoes, then cut the beef into bite-sized pieces.
- Season the beef: In a bowl, mix the beef with salt, pepper, and thyme until evenly coated.
- Sauté garlic: In a skillet over medium heat, melt butter and sauté minced garlic until fragrant (about 1 minute).
- Combine in slow cooker: Place seasoned beef in the slow cooker, add halved potatoes, pour in beef broth, and top with sautéed garlic butter.
- Cook: Cover and cook on low for 6 to 8 hours or until the beef is tender.
- Serve: Stir gently before serving, and enjoy alongside a side salad or crusty bread.
