- 8 oz pasta (spaghetti or penne)
- 4 cups fresh spinach (packed)
- 3 cloves garlic (minced)
- 1/4 cup freshly squeezed lemon juice
- 2 tbsp extra virgin olive oil
- 1/2 cup grated Parmesan cheese
Instructions
- Cook the pasta in salted boiling water according to package instructions until al dente. Drain, reserving some pasta water.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about one minute until fragrant.
- Add fresh spinach to the skillet and sauté until wilted, about two minutes.
- Combine the cooked pasta with the spinach-garlic mixture and stir in lemon juice. Toss well, adding reserved pasta water as needed to achieve desired consistency.
- Sprinkle grated Parmesan cheese over the dish and mix until melted.
- Serve immediately, garnished with additional cheese or lemon zest if desired.
