- 4 boneless, skinless chicken breasts (approximately 680g)
- 2 cups fresh strawberries, sliced (about 300g)
- 4 cups mixed greens (spinach, arugula, romaine)
- 1/2 cup slivered almonds (about 75g)
- 3 tablespoons balsamic vinegar
Instructions
- Preheat your grill or skillet to medium-high heat. Season the chicken with salt and pepper. Grill for about 6-7 minutes on each side until the internal temperature reaches 165°F (75°C).
- While the chicken is cooking, wash and slice the strawberries.
- In a large bowl, combine the mixed greens.
- Once cooked, let the chicken rest briefly before slicing into strips.
- Top the mixed greens with chicken strips, sliced strawberries, and slivered almonds.
- Drizzle with balsamic vinegar and toss gently to combine.
- Serve chilled or at room temperature.
