Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together flour and baking powder. Gradually add this mixture to the wet ingredients, stirring gently until just combined.
- Fold in the finely chopped strawberries until evenly distributed.
- Drop tablespoon-sized portions of dough onto prepared baking sheets and bake for 12-15 minutes or until lightly golden around the edges.
- Allow cookies to cool on wire racks before serving.
