Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Mix in the vanilla extract.
- In another bowl, whisk together the all-purpose flour, baking powder, and a pinch of salt. Gradually add this mixture to the wet ingredients until just combined.
- Gently fold in the finely chopped strawberries and pecan pieces if using.
- Scoop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for about 12-15 minutes or until edges are lightly golden. Let cool before transferring to wire racks.
