- 1 lb lean ground chicken
- 1/4 cup green onions, finely chopped
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together ground chicken, green onions, garlic, ginger, salt, and pepper until well combined.
- Shape the mixture into small meatballs, about one inch in diameter, and place them on the prepared baking sheet.
- Bake for approximately 20 minutes or until golden brown and cooked through.
- While the meatballs bake, combine soy sauce, honey, and rice vinegar in a small saucepan over medium heat until warmed.
- Drizzle the teriyaki sauce over the baked meatballs before serving.
