- 2 (4 oz) salmon fillets
- 1 cup cooked short-grain sushi rice
- 2 tbsp teriyaki sauce
- 2 green onions, finely chopped
- 1 sheet nori, cut into strips
- 1/2 cup shredded carrots
- 1 tbsp toasted sesame seeds
Instructions
- Preheat oven to 375°F (190°C) and grease an oven-safe baking dish.
- In a bowl, mix cooked sushi rice with a splash of rice vinegar and set aside.
- Spread half of the seasoned rice in the baking dish, top with salmon fillets, and drizzle with teriyaki sauce.
- Layer remaining sushi rice over the salmon and sprinkle chopped green onions on top.
- Bake for 20-25 minutes until heated through and golden on top.
- Garnish with shredded carrots and sesame seeds before serving warm.
