Ingredients
-
1 slice of watermelon (1 inch thick, round slice)
-
3 tablespoons cream cheese (softened)
-
3 tablespoons heavy cream
-
1/4 cup powdered monk fruit sweetener (adjust to taste)
-
2 teaspoons lemon juice
-
1/2 teaspoon vanilla essence
-
1/2 cup blueberries
-
1/2 cup raspberries
-
Fresh mint leaves (optional, for decoration)
Instructions
-
Cut a round, 1-inch thick slice from the center of the watermelon.
-
Pat the surface of the slice dry with paper towels and lay it flat on a cutting board.
-
In a bowl, beat the softened cream cheese and heavy cream until smooth.
-
Add the monk fruit sweetener, lemon juice, and vanilla essence. Mix until light and fluffy.
-
Spread the cream mixture evenly over the watermelon slice, leaving a small border around the edge.
-
Top with blueberries and raspberries, pressing them gently into the cream.
-
Add fresh mint leaves for garnish, if desired.
-
Slice into wedges like a pizza and serve immediately.
Notes
-
For a vegan version, substitute with plant-based cream cheese and coconut cream.
-
Use any combination of fresh fruits like strawberries, kiwi, or mango.
-
Assemble just before serving to avoid excess moisture from the watermelon.
